Recipe: Lobster Pasta

Lisa from Kombinations Seafood shares one of her favourites lobster recipes. High-quality fresh, local produce definitely makes the difference in this dish! Lisa recommends pairing this lobster pasta with a crisp Sauvignon Blanc or Chardonnay.

 

INGREDIENTS

  • 1 Leek
  • 2 tsp chilli flakes
  • 2 – 3 garlic cloves
  • 2 x 300g crushed tomatoes
  • 2 x ripe locally grown tomatoes
  • Big dash of white wine
  • 250g good pasta
  • 3 Medium Lobster tails
  • Parmesan cheese
  • Salt and freshly ground pepper to taste

METHOD

  • Fry off leek, chilli and garlic in a good quality olive oil
  • Once leek has softened, add tinned and diced tomatoes and white wine
  • Simmer for 10-15min
  • Add cooked pasta and raw diced lobster tails
  • Stir through until cooked (5min)
  • Add fresh parsley, salt & pepper and parmesan to taste
