Recipe: Lobster Pasta

INGREDIENTS
- 1 Leek
- 2 tsp chilli flakes
- 2 – 3 garlic cloves
- 2 x 300g crushed tomatoes
- 2 x ripe locally grown tomatoes
- Big dash of white wine
- 250g good pasta
- 3 Medium Lobster tails
- Parmesan cheese
- Salt and freshly ground pepper to taste
METHOD
- Fry off leek, chilli and garlic in a good quality olive oil
- Once leek has softened, add tinned and diced tomatoes and white wine
- Simmer for 10-15min
- Add cooked pasta and raw diced lobster tails
- Stir through until cooked (5min)
- Add fresh parsley, salt & pepper and parmesan to taste
